Sorry, I missed an important fact in the second paragraph: I’m able to set the YCbCr to 4:4:4 but only with 8-bit depth and HDR/WCG off
This is due to the bandwidth limitations of HDMI 2.0. It is not currently possible to output 4k @ 60 Hz with 4:4:4 and 10 bit HDR.
Thanks! I would imagine that HDMI 2.1, when it’s available, will require new ports, i.e. new hardware and current TVs are destined to never be upgraded.

For the full bandwidth of HDMI 2.1, yes, that will require hardware upgrades. Some of the features of HDMI 2.1 can be backported to HDMI 2.0 though, as Samsung has done with Auto Game Mode (ALLM) and FreeSync VRR on their top 2018 LEDs and QLEDS.

You should use the automatic settings. Your PS4 Pro will switch automatically depending on the content. The TV supports all of them, so you shouldn’t have any issues.
Why not? That’s 14.9Gbps out of 18.2Gbps. The 32channel PCM (36mbps) allowed in HDMI 2.0a (2.0b sucks) with the embedded metadata for HDR10 should fit in the pipe.
No, 4k @ 60Hz 10 bit requires 20.05 Gbps, not 14.9. HDR itself is negligible, you’re right, it’s the 10 bit 4:4:4 that isn’t possible with 4k @ 60Hz.
